“We’ve been working with Meredith to showcase their ex-dairy goats — heritage breeds like Saanen, British Alpine and Toggenburg — in dishes like our slow-cooked cabrito shoulders, finished in a Southern Andalucian Agri Dulce sauce with La Vera smoked paprika, Fino sherry, honey, dried fruits and pine nuts. These older female goats, so different from wild or Boer varieties, offer a delicate, less gamey flavour. Meredith’s commitment to sustainability, from using both ends of the dairy system to processing on-farm for higher animal welfare, is truly inspiring.
