Goat Massaman Curry

Serves 2-3 people

Ingredients

Ex-Dairy Goat curry diced 500g
1 onion
'Ayam' Massaman curry paste
2 cans coconut cream
1tbs fish sauce
2 potatoes, cut into 2cm pieces
Kaffier lime leaves x2

Preparation

Step 1 Preheat oven to 170 C
Step 2 Dice onion, add into pan with oil and cook until translucent. Add jar of massaman curry paste and cook off on low heat for 1-2 minutes.
Step 3 Add diced goat and cook until lightly browned. Add coconut cream, fish sauce and kaffier lime leaves.
Step 4 Place in oven, covered, for 2 hours.
Step 5 Add potatoes and cook for another 15-20 minutes.
Step 6 Top with crushed peanuts, coriander and serve with fresh jasmine rice.
