Pad Kra Pao with Capretto
Fragrant minced goat wok-fried to golden perfection with aromatic garlic, ginger and chilli.

Ingredients
- 500g minced capretto or ex-dairy goat
- 4 cloves (25g) minced garlic
- ½ diced onion
- 2cm piece (25g) ginger
- 2 tspns (10g) brown sugar
- 1 long red chilli (sliced)
- 2 ½ tblspns (40ml) light soy sauce
- 1 ½ tblspns (20ml) dark soy sauce
- 1 bunch thai basil or regular sweet basil
- Steamed rice to serve
- 3 eggs (optional)
Preparation
- Step 1 In a wok or sauté pan, cook minced goat until golden brown.
- Step 2 Add garlic, onion, chilli, ginger, and cook until fragrant.
- Step 3 Add light soy, dark soy, and sugar. Cook until well incorporated.
- Step 4 Garnish with basil at the end, serve with rice, and top with a fried egg.
